Gosh, it feels so good to finally tell you! I’m really not the best at keeping secrets or hiding my emotions so this has been so hard to keep hidden and I’m glad I was able to get that off my chest.

Now that we’re back to being 100% honest with each other, let’s talk about how awesome it is to eat vegetables that taste like pie. (Yes, this is me still be 100% honest.)
I mean, not exactly, because there is no flaky crust or whipped cream or sprinkle of cinnamon on top (hey, you could do that!). But you know what I mean. >>> This smoothie tastes like pie.
And you would never believe that this beauty is packed with sweet potato and zucchini!
I’ve been packing my smoothies with vegetables a LOT lately. Here’s why:
- I feel very accomplished to eat 2 servings of vegetables before 8am.
- The extra fiber in veggies keeps me fuller longer.
- YOU CAN MAKE SMOOTHIES THAT TASTE LIKE SWEET POTATO PIE.
This sweet potato pie smoothie is extra thick and creamy, just like I like my pie! This comes from the fact that everything in this smoothie is frozen AND I used my homemade almond milk which is creamy to the max. Like, ultimate creaminess.
Of course, you can use store bought almond milk or coconut milk or whatever kind of milk you like; it just might not be quite as creamy. YOU DO YOU. No judgement here.
But here’s the deal. Even though the veggies keep me pretty full, it’s not enough. So I like to add vanilla protein powder as well. The added protein helps me stay full and the vanilla flavor amps up the sweet potato pie factor. It’s really a win-win.

Description

Ingredients
- 1 cup sweet potato, steamed and frozen
- 3/4 cup zucchini, steamed and frozen
- 1 scoop vanilla protein powder (I love Nuzest Clean Lean Protein)
- 1 date, pitted
- 1–1.5 cups almond milk
- Granola for topping!
Instructions
- Combine all ingredients in a high powdered blender and blend until smooth.
- Top with your favorite granola!
