Description

An entire breakfast of bacon, eggs, crispy potatoes, and greens all on one pan thanks to this sheet pan breakfast bake! Perfect for an easy weekend brunch with the family or serve with fruit and baked goods to feed a crowd!


Ingredients

Scale

1 pound potatoes, cubed
1 bunch green kale, stems removed and torn into pieces
2 Tablespoons olive oil
¼ teaspoon dried basil
¼ teaspoon dried thyme
¼ teaspoon dried oregano
½ teaspoon garlic powder
Salt and pepper, to taste
½ pound bacon, cut into 1 inch strips
6 large eggs


Instructions

Preheat oven to 400 degrees F with baking sheet inside (this will help get the potatoes crispy.)
In a bowl, add the potatoes, kale, olive oil, and seasonings. Toss to combine.
Remove baking sheet from oven and add potato mixture. Top potatoes with bacon pieces and place back into the oven.
Roast for 30 minutes, tossing halfway through.
After 30 minutes, remove baking sheet and move potato mixture to create six wells. Add eggs gently as to not crack the yolk.
Place into the oven and bake until the egg whites set, about 10-12 minutes.
Serve immediately!
