How was your weekend? Mine was FAB. I spent two straight days in Wisconsin – ‘lake country’ to be exact – and I swam in the lake, paddle boarded for the first time, ate lots of fabulous food, drank delicious drinks, and totally unplugged. It was glorious and so refreshing.
I was in charge of bringing snacks for the weekend. And I honestly believe that one of my top 5 qualities is my snack packing ability, aside from my fabulously good looks and charming personality, obviously. But seriously, I’ve had this conversation with Pat before and it is a very underrated skill that I am very good at.
Plus I am all about knowing your strengths and working them – so if you need some snack packing tips, I’m your girl.
Before the trip, I made a batch of my grain free granola. This stuff is my JAM. I freaking love it and I know you will too. But what I have found when others try it is that a significant amount of people don’t like walnuts.
WTF?
I guess the skins tend to have a bitter flavor that a lot of people don’t enjoy, but I think they are the best. And just like my underrated snack packing ability, walnuts are the most underrated nut… in my honest opinion.
So I did what any normal person would do in this situation – make walnut butter. Duh!
And because I really wanted to shake things up, I added strawberries! Trader Joe’s sells tons of freeze dried fruit and I opted for strawberries because #summer.
What I loved most about making this walnut butter is how quick and easy it was. When you make peanut butter, almond butter, or even cashew butter, the time to process is much longer – 10 minutes or so. This walnut butter processed for no longer than 5 minutes and it was perfectly smooth.

Ingredients
- 2 cups walnuts, raw and unsalted
- 1/2 cup freeze dried strawberries
- Pinch of salt
Instructions
- Preheat the oven to 350 degrees F.
- Roast walnuts on baking sheet for 10 minutes.
- Let cool and place walnuts in a food processor. Pulse until the nuts are mostly broken down.
- Add in freeze dried strawberries and salt and process until smooth.

It’s freeze-dried fruit so it should last as long as regular peanut butter or almond butter in the fridge!
