  • 1/2 cup rolled oats
  • 1/2 cup unsweetened almond milk (I prefer Califia Farms.)
  • 1/2 cup pumpkin puree, not pumpkin pie filling
  • 1 teaspoon chia seeds
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla


  1. Place all ingredients in a bowl and mix to combine.
  2. Place in the fridge overnight and enjoy!
