Whelp, I’m baaaaaaack. And honestly I could not be happier. I’m a creature of habit and as much as I love traveling, I love my routine.
I’ve got lots and lots to share with you about Italy. It was completely incredible. The food. The scenery. The people. The culture. Everything was amazing.
But I definitely have no desire to eat bread, pizza or pasta anytime soon. And I’m pretty sure I drank more wine that water over the last 2 weeks. As for the gelato, I think I could maintain the gelato consumption. Yep, I most definitely could.
But let’s get back to business and talk about these pumpkin blondies! Before I left, I made these and brought them in to work for my colleagues. People. Went. Nuts. I mean – pumpkin… obviously. Dark chocolate. Duh. It’s really hard to say no.
Any why should we?! Let’s get into it…
- It’s October so pumpkin is a given.
- Dark chocolate is good for your heart.
- Sometimes brownies don’t cut it and you really just need a blondie.
These pumpkin blondies are super dense, moist, gooey-ooey, uber chocolately and pretty much everything that you could want out of a dessert. Oh and they take about 10 minutes of prep and 30 minutes in the oven. So, weeknight dessert here I come!

Pumpkin Blondies with Dark Chocolate Chunks

Description
Soft, gooey, and dense pumpkin blondies with dark chocolate chunks are loaded with fall flavors that will satisfy your sweet tooth!
Ingredients
- 1 1/4 cup gluten free AP flour
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 3/4 cup pumpkin puree
- 4 1/2 ounces dark chocolate, roughly chopped
Instructions
- Preheat oven to 350 degrees F. Spray an 8×8 inch baking dish with coconut oil.
- In a large bowl, sift together flour, pumpkin pie spice and salt.
- In a medium bowl, mix together unsalted butter, brown sugar, white sugar, egg, and pumpkin puree.
- Add wet ingredients to dry and mix to combine. Fold in dark chocolate chunks.
- Spoon mixture into baking dish and bake for 30 minutes or until an inserted toothpick comes out clean.

Italy is still on my list of places I’d love to travel too. And I totally get what you are saying about gelato – it’s been my go-to my entire pregnancy thus far. π As for these blondies, I’ve always been a fan of brownies but since you’re throwing pumpkin into the mix… I’ll take one of those, please!
