Sometimes (read: all the time) I am looking for a quick and easy weeknight dinner solution that feels like a weekend dinner. That might sound crazy, but is that too much to ask?! Quick and healthy meals are necessary this time of the year when schedules are full and time is short. I have a few staple meals that can be made in under 30 minutes and offer a simple and healthy meal.
Baked chicken dishes fall in to this category, but nothing about baked chicken seems elegant to me. Except… except if you are roasting a whole chicken because that is classy AF and about as elegant as a Wednesday dinner can be.

While traveling for two weeks throughout Italy (you can check out my recaps here and here), I was exposed to all different kinds of meat, cured and not. My favorite was boar sausage! During the final stop of our Tuscany wine tour, we sampled three Chiantis and three different types of meat – prosciutto, capicola, and coppa.
So, today I am elevating your weeknight dinner with a super simple provolone and prosciutto wrapped chicken! Let’s get to it.
P.S. See that gorgeous wooden table in the photo above?? Pat and I bought a kitchen table and Andersonville Antiques on Shop Small Saturday and I am so in love with it. The table and bench are made from a single late 1800’s dairy barn right here in Illinois. How cool is that?!

Provolone and Prosciutto Wrapped Chicken

Description
This simple, 3-ingredient provolone and prosciutto wrapped chicken is easy to prepare, can be multiplied to feed a crowd and looks impressive!
Ingredients
- 2 chicken breasts, about 1/2 pound each
- 2 slices provolone
- 4 slices prosciutto
Instructions
- Preheat the oven to 350 degrees F.
- Spray a baking sheet with cooking spray (I use Trader Joe’s Coconut Oil Spray) and place the two chicken breasts on the sheet.
- Top each breast with one slice of provolone cheese and wrap with two slices of prosciutto.
- Bake until the cheese is melted, prosciutto is crispy and chicken is cooked through – the chicken breast I used were thick and took about 18 minutes to cook.

gurlllll. it doesn’t get better than melty & gooey cheese & prosciutto. i die for this, especially since it’s do-able for a weeknight dinner! & you made me lol – if when we go to italy i will actually leave my clothes behind in order to pack our bags full of sausage & wine. boar sausage sounds delightful!
