Growing up, my family was never big on Christmas presents. I mean, I definitely wanted a ton of presents; but Santa never delivered that illusive Coach bag (hello 2003!) or Ugg boots that my friends received. My family just didn’t spend a lot of money on presents. Of course we all bought each other gifts and exchanged them in our pajamas on Christmas morning; but they were never big.
When I was young, I was jealous of my friends whose parents spoiled them rotten on Christmas morning. But as I’ve aged – and of course, with age comes wisdom – I thank God that my parents instilled the true meaning of the season into me. A few weeks ago, I received an email from my mom asking what I wanted for Christmas; and to be honest, I had a really difficult time coming up with more than two things.
This will be our third Christmas since my dad passed away. My mom and older sister live in Minnesota; my little sister lives in Colorado. And I, as you know, live in Chicago. The only real thing I want for Christmas this year is to be at home and spend time with my family – and lucky for me – that is exactly what I will be doing! This year we are exchanging small gifts, and really focusing on spending time together because it doesn’t happen very often.
We are going to go bowling one day, maybe see a movie, attend Katie’s latest show, definitely bake lots of cookies, probably stop by our favorite microbrewery, and of course attend Christmas mass. Oh and make these protein packed gingerbread pancakes on Christmas morning!
One of my favorite brands I discovered this year is Kodiak Cakes, and specifically their Power Cakes mix. I love this mix because the ingredient list is short and on point. It is also loaded with protein – 14 grams per serving! And all you need to do is add liquid, mix, and you’re ready to roll. I’ve used this mix in muffins, protein bars, and finally pancakes.
To the mix I added a few spices to turn our pancakes into gingerbread pancakes! I know you already have all five of these spices in your pantry – so you can make your own gingerbread spice and flavor all your baked goods this Christmas! Do it, you won’t regret it.
And don’t forget the butter. You won’t regret that either.

Protein packed gingerbread pancakes are the best breakfast to wake up to on Christmas – one serving yields 14 grams of protein and tastes like the holidays!
Ingredients
For the gingerbread spice:
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon all spice
For the pancakes:
- 1 cup Kodiak Cakes Power Cakes mix
- Gingerbread spice mix
- 3/4 cup almondmilk
Instructions
- Make your gingerbread spice: combine all ingredients in a bowl, stirring to combine.
- In a large bowl, combine Kodiak Cakes mix, gingerbread spice mix, and almondmilk. Stir until fully incorporated.
- Heat a non-stick skillet over medium-low heat and add a little butter. Using a 1/4 cup scoop, scoop batter onto skillet. Cook until underside is brown and bubbles are no longer forming, about 2 minutes.
- Flip and cook until brown, approximately 1 minute.
- Using the remaining batter, cook the rest of your pancakes.

It’s so funny how that changes, isn’t it? I feel like all of the sudden I’m an adult (hello, I’m 28 so I’ve definitely been an adult for some time.) and actually being with my family is so much more important. Crazy that you are coming to MN and right where I LIVE, well close to that brewery so probably really close! It’s snowing and cold here right now so I’m thinking a white Christmas. I will definitely be making waffles or pancakes this weekend. I will whip these up for the girls this week since I have a huge Costco size box of Kodiak cakes in the cupboard from my oldest daughters birthday and the girls love gingerbread.
