Pistachio Cranberry and Coconut Chocolate Bark

I’m keeping this short and sweet for you today. Short because it’s Christmas, duh. And sweet because… well, chocolate.

This is my last post before Christmas and my last for 2015!  I will be spending the next few days with Pat’s family before heading up to Minnesota to see my mom and sisters. I want to thank you all for reading along these past few months and I am very excited for what 2016 has in store!

This dark chocolate bark is the easiest thing on the planet and it’s almost silly to have a recipe for it.

Start with whatever chocolate you have.  Do you have extra melted chocolate from coconut macaroons? Yes! Make chocolate bark.  Do you happen to keep a Trader Joe’s Pound Plus bar in your pantry for just-in-case situations? No? That’s just me I guess…

Either way. This takes 5 minutes of work and is a great addition to your Christmas cookie tray.

Pistachio Cranberry and Coconut Chocolate Bark

  • Prep Time: 5 mins
  • Cook Time: 30 mins
  • Total Time: 35 mins

Ingredients

  • Dark chocolate
  • Pistachios
  • Coconut flakes, toasted
  • Dried cranberries

Instructions

  1. Line a cookie sheet with parchment paper or a silpat liner.
  2. Melt dark chocolate in a double boiler or the microwave and spread on cookie sheet.
  3. Top chocolate with pistachios, coconut flakes, and dried cranberries.
  4. Freeze until set, about 30 minutes.
  5. Break apart and eat!
