I’m keeping this short and sweet for you today. Short because it’s Christmas, duh. And sweet because… well, chocolate.
This is my last post before Christmas and my last for 2015! I will be spending the next few days with Pat’s family before heading up to Minnesota to see my mom and sisters. I want to thank you all for reading along these past few months and I am very excited for what 2016 has in store!
This dark chocolate bark is the easiest thing on the planet and it’s almost silly to have a recipe for it.
Start with whatever chocolate you have. Do you have extra melted chocolate from coconut macaroons? Yes! Make chocolate bark. Do you happen to keep a Trader Joe’s Pound Plus bar in your pantry for just-in-case situations? No? That’s just me I guess…
Either way. This takes 5 minutes of work and is a great addition to your Christmas cookie tray.

Pistachio Cranberry and Coconut Chocolate Bark
- Prep Time: 5 mins
- Cook Time: 30 mins
- Total Time: 35 mins
Ingredients
- Dark chocolate
- Pistachios
- Coconut flakes, toasted
- Dried cranberries
Instructions
- Line a cookie sheet with parchment paper or a silpat liner.
- Melt dark chocolate in a double boiler or the microwave and spread on cookie sheet.
- Top chocolate with pistachios, coconut flakes, and dried cranberries.
- Freeze until set, about 30 minutes.
- Break apart and eat!
