Ingredients

- 3 cups old fashioned oats
- 1 1/2 cups pistachios
- 1 cup pepitas
- 1/2 cup sunflower seeds
- 1/8 cup sesame seeds
- 1/4 cup maple syrup
- 1/3 cup olive oil
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- Optional: 1/2 cup dried apricots and 1/4 cup Craisins
Instructions
- Preheat oven to 350 degrees F.
- Mix all dry ingredients together in a large bowl, except fruit.
- Combine maple syrup, olive oil, and brown sugar. Mix in salt, cinnamon, and cardamom.
- Fold wet ingredients into dry.
- Bake for 45 minutes, stirring ever 15 minutes.
- Once cool, add fruit if desired.
