Olive Oil Pistachio Cardamom Granola

Ingredients

  • 3 cups old fashioned oats
  • 1 1/2 cups pistachios
  • 1 cup pepitas
  • 1/2 cup sunflower seeds
  • 1/8 cup sesame seeds
  • 1/4 cup maple syrup
  • 1/3 cup olive oil
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • Optional: 1/2 cup dried apricots and 1/4 cup Craisins

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix all dry ingredients together in a large bowl, except fruit.
  3. Combine maple syrup, olive oil, and brown sugar. Mix in salt, cinnamon, and cardamom.
  4. Fold wet ingredients into dry.
  5. Bake for 45 minutes, stirring ever 15 minutes.
  6. Once cool, add fruit if desired.
