Olive Oil Cupcakes with Honey Buttercream and Fresh Figs

Olive oil cupcakes with buttercream and fresh figs are slightly sweet from the buttercream and savory from the olive oil Рthe best golden birthday treat!



For the cupcakes:

  • 1/2 cup almond meal
  • 3/4 cup sugar
  • 1 cup all purpose flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 large egg
  • 1/2 cup olive oil
  • 1/2 cup unsweetened almond milk (I prefer Califia Farms!)
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the honey buttercream:

  • 1/2 cup (1 stick) butter, at room temperature
  • 1/4 cup honey
  • 1 1/22 cups powdered sugar
  • 1 Tablespoon almond milk


For the cupcakes:

  1. Preheat the oven to 350 degrees F. Line 12 cupcake tins with cupcake liners and set aside.
  2. In a large bowl, whisk together the almond meal, sugar, flour, salt, baking powder, and baking soda. In a medium bowl, whisk together the egg, olive oil, milk, lemon juice, and vanilla. Add the wet ingredients to the dry ingredients and stir to combine. Pour the batter into the cupcake tins, filling them up halfway, and bake until a toothpick inserted into the center comes out clean; begin checking for doneness at 18 minutes.
  3. Let cool on a rack for 5 minutes and then remove to the rack and cool completely.

For the honey buttercream:

  1. Cream together butter and honey.
  2. Add half of the powdered sugar and mix on low speed until the sugar is incorporated. Then increase speed to medium and beat until creamy.
  3. Add last cup of powdered sugar, mixing on low speed at first and then on higher speed until creamy – about 2 minutes more.
  4. Add almond milk and mix once more.
  5. Check your consistency – feel free to add a little more powdered sugar or almond milk if necessary.


  1. Using a piping bag, pipe the buttercream on top of the cupcakes and top with a fresh fig!
