Mediterranean Turkey Bowls with Savory Yogurt

Made in under 20 minutes and with less than 10 ingredients, these Mediterranean turkey bowls with savory yogurt will quickly become your new go-to weeknight meal!

BUT, they only take 20 minutes to make which means you can whip them up for your sweetheart tonight and spend the rest of the night snuggling on the couch watching your favorite rom-com.

Or you can add them to next week’s meal plan because I know you need a 20 minute dinner in your life. Trust me, I do too.

Ok, let’s talk turkey.

To many, ground turkey is bland and boring; but if I am being honest, that is why I like it so much! It serves as a blank canvas that can take on any flavor. And we’re all here for the flavor, right?!

To give this turkey some flavaaaa I added a little oregano, thyme, garlic, salt and pepper. Simple spices that make an impact.

I added about a 1/4 cup to each bowl, drizzled on a healthy amount of olive oil and sprinkled with fresh mint, salt, and pepper.

Again, simple allergy-friendly ingredients that make an impact.

And these wouldn’t be true Mediterranean bowls without tomatoes, cucumber, kalamata olives (the brininess is perfect against the creaminess of the yogurt), fresh mint, and a squeeze of lemon juice!

Description

Made in under 20 minutes and with less than 10 ingredients, these Mediterranean turkey bowls with savory yogurt will quickly become your new go-to weeknight meal!


Ingredients

Scale

1 pound ground turkey
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon thyme
1/4 teaspoon oregano
Pinch of salt and pepper
1 cup grape tomatoes, sliced
1/2 red onion, diced
1/2 cucumber, sliced
1 cup plain yogurt*
Kalamata olives, sliced
Mint


Instructions

Heat oil in a skillet and add turkey, stirring occasionally for 2-3 minutes. Next, add the garlic, thyme, oregano, salt, and pepper and stir to combine. Cook turkey on medium heat until no longer pink.
While the turkey is cooking, slice the tomatoes, onion and cucumber.
Assemble the bowl by spreading ¼ cup yogurt in the bottom, and then adding the cooked turkey, tomatoes, cucumbers, onions, and a drizzle of olive oil, sliced olives and mint.


Notes

*use unsweetened coconut yogurt for Whole30
