Mediterranean grilled zucchini with chickpeas, feta, and pesto is a super simple summer salad that requires only 7 ingredients and your grill! Serve as a side to grilled chicken and fish or as the main course!
Last week I went to turn on my air conditioning because the forecast was saying 93 degrees on Wednesday and it was broken. *Cue the uncontrollable sweating!*
And in that kind of heat, or really any significant heat, I will do just about anything to not turn on my oven. After looking in my fridge and pantry, I came up with this delicious and super easy dish! It’s hearty enough to serve as a vegetarian main course or as a side paired with some protein for all the meat eaters.
Mediterranean Grilled Zucchini with Chickpeas, Feta, and Pesto
This grilled zucchini salad is a snap to make and it has quickly become my dish to serve alongside grilled chicken!
AND what’s even better, is that you probably have all of the ingredients for this grilled zucchini salad in your fridge or pantry:
Zucchini – Duh! My fridge/life is overflowing with zucchini in the summer.
Chickpeas – I always keep a can of chickpeas in the pantry because you will never know when you need to make vegetarian green curry or my favorite hummus!
Feta cheese – Feta cheese is something that I keep in my fridge all the time! I love anything that is Mediterranean inspired and feta is a staple! And I just love the saltiness of this sheep’s milk cheese.
Pesto – Store bought or homemade will work! I had some pesto from Gotham Greens in my fridge and it did the trick. But fresh basil is so abundant in the summer, so feel free and use whatever kind is your favorite!
There are a few tips that will ensure this is the best Mediterranean Grilled Zucchini Salad!
- Make sure to cut your zucchini in big chunks (or thick rounds). We do not want the zucchini falling through the grill grates!
- Don’t forget the squeeze of lemon! It completely balances out the recipe so you get a serious salt, fat, acid, heat situation.
And with an ingredient list as basic as that, you know the recipe will follow suit:
Grill the zucchini. Preheat the grill to medium-high heat. As the grill heats, slice the zucchini lengthwise into quarters and then at an angle into chunks. Place in a large bowl and drizzle with olive oil, salt and pepper. Add zucchini to grill and cook until soft and cooked through, about 4 minutes per side. Remove from grill and allow to cool for 5-10 minutes.
Make the salad. Add grilled zucchini, chickpeas, pesto and 2 ounces of feta to a bowl. Toss to combine. Move to a large serving plate and crumble the remaining 2 ounces of feta on top and drizzle with lemon.

Ingredients
For the zucchini:
2 pounds zucchini
2 Tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
For the salad:
1 can chickpeas, drained and rinsed
¼ cup pesto
4 ounces feta, crumbled
Juice of ½ lemon
Salt and pepper
