Happy Birthday to me and Hungry by Nature! Today we are celebrating two birthdays with Simple Mills cake mix and frosting and Dandies marshmallows!

As I am writing this, it is Monday (yesterday) August 28th and it is my birthday! I’m at my mom’s house in Minneapolis; the air is cool, the windows are open, and there is a nice breeze coming in. I have a big glass of honey lavendar kombucha (home brewed, of course) and I am feeling like the luckiest girl in the world.
I’ve been in Minnesota for the last few days – first to attend the Pinch of Yum Tasty Food Photography Workshop and then I spent some time up north at my cabin. And now I am just waiting for my sister to wake up so we can go for a walk around the lake and get brunch!
29 already feels GOOD.
My mom, Katie, and I celebrated last night with a delicious dinner and homemade ice cream (it’s vegan! and seriously good). But what is a birthday without cake?!
Today we are celebrating two birthdays – my 29th and Hungry by Nature’s 2nd! HBN isn’t quite two years old; but two birthdays are better than one and two cakes are certainly better than one!

These mini cakes turned out better than I imagined! Which is silly because I used Simple Mills boxed mixes – banana bread and chocolate cake – and their frosting to layer and decorate and Dandies marshmallows to create marshmallow fondant!
A HUGE thank you to both Simple Mills and Dandies for supplying the ingredients to make these cakes!
For both cakes, I followed the directions on the box… for the most part. Each cake was baked in a 9 inch round pan and then the mini rounds were cut from the 9 inch. And because most people don’t bake banana bread in a round cake pan, I had to adjust the baking times – but that’s it!
After each round was cut out, I used Simple Mills frosting to layer and crumb coat the cake before they went in to the fridge to set up. Then I decorated the banana bread cake with chocolate frosting and made a marshmallow fondant for the chocolate cake!
I’ve been wanting to try making marshmallow fondant ever since I saw Nadia do it on The Great British Baking Show. I followed this recipe, but I must warn you – this took significantly longer than the recipe stated and was hard… actually it was serious arm workout and my biceps were sore all day long. It also didn’t go quite as well as I had hoped, but it turned out pretty good for a first time!
