Grilled Shrimp Skewers with Cheesy Cauliflower Mash

A super simple grilled shrimp dish is the perfect weeknight summer dish – and don’t forget the cheesy cauliflower mash (made with goat cheese)!



For the shrimp:

  • 1 pound shrimp
  • 1/2 cup olive oil
  • 1 Tablespoon lemon juice
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper*

For the cheesy cauliflower mash:

  • 1 head cauliflower
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper*
  • 1 cup vegetable stock
  • 2 ounces goat cheese*


  1. De-vein and peel the shrimp and place in a Ziploc bag. Or buy it de-veined and be a total winner – like me!
  2. Combine the rest of the ingredients in a small bowl. Whisk to combine and add it to the bag of shrimp.
  3. Let marinade for 1 hour in the fridge.
  4. While the shrimp is marinading, make the cheesy cauliflower mash. Roughly chop the cauliflower and steam until tender.
  5. Place steamed cauliflower and the remaining ingredients in a food processor and process until smooth.
  6. Preheat the grill to high heat, approximately 450 degrees F.
  7. Skewer the shrimp and cook in direct high heat for 2 minutes on each side.


*Omit for AIP diet.
