I’m beyond excited to share this recipe with you today!! Because:

- PURPLE. It’s purple cauliflower and I feel like a kid eating grape flavored food, except this isn’t grape flavored. That would be gross.
- Summer grilling is still giving me life.

Let’s start with the easiest shrimp marinade evaaaa. Olive oil, lemon juice, garlic, salt, and pepper. Super easy and gives the shrimp tons of flavor. But be careful not to let the shrimp sit too long in the marinade – we don’t want the acidity from the lemon juice to cook the shrimp.
It’s science.
But the real star of this show is the cauliflower – the cheesy cauliflower mash! Let’s break it down.
I picked up this gorgeous purple cauliflower at the farmers market! They also had a pretty yellow cauliflower and had the hardest time choosing between the two. But in the end, how could I say no to this?!
The cauliflower is roughly chopped and steamed until tender. After a blitz in the food processor with some veggie stock and spices, the goat cheese is added and the level of creaminess goes from 0 to 100 real quick. You’re definitely not gonna want to skip out on the goat cheese.
The hardest part of this recipe is getting your shrimp onto the skewers – which actually isn’t hard at all. Tedious, maybe. But not hard.
And I, of course, served this with Pinch of Yum’s 5 Minute Magic Green Sauce. I actually eat this sauce with a spoon – it’s that good. And it is the perfect accompaniment to grilled shrimp! This would also be great with a chipotle dipping sauce or my cheesy vegan cashew cream sauce!

Grilled Shrimp Skewers with Cheesy Cauliflower Mash

Ingredients
For the shrimp:
- 1 pound shrimp
- 1/2 cup olive oil
- 1 Tablespoon lemon juice
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper*
For the cheesy cauliflower mash:
- 1 head cauliflower
- 1/2 teaspoon salt
- 1/4 teaspoon pepper*
- 1 cup vegetable stock
- 2 ounces goat cheese*
Instructions
- De-vein and peel the shrimp and place in a Ziploc bag. Or buy it de-veined and be a total winner – like me!
- Combine the rest of the ingredients in a small bowl. Whisk to combine and add it to the bag of shrimp.
- Let marinade for 1 hour in the fridge.
- While the shrimp is marinading, make the cheesy cauliflower mash. Roughly chop the cauliflower and steam until tender.
- Place steamed cauliflower and the remaining ingredients in a food processor and process until smooth.
- Preheat the grill to high heat, approximately 450 degrees F.
- Skewer the shrimp and cook in direct high heat for 2 minutes on each side.
