These Healthy Granola Butter Rice Crispy bars are made only 5 good-for-you ingredients and come together in minutes! They are the perfect easy, no-bake, gluten & dairy-free dessert to satisfy your sweet tooth!
- 3 cups crispy brown rice cereal
- 2 Tablespoons coconut oil, divided
- 3 cups mini marshmallows
- 1/2 cup granola butter
- 8 oz dark chocolate
- flaky sea salt
Line an 8″ or 9″ square pan with parchment paper, leaving an overhang on two sides. Add cereal to a large bowl.
Melt 1 Tablespoon coconut oil in a small saucepan over medium-low heat. Add mini marshmallows and stir until completely melted. Turn off heat, add granola butter, and whisk until fully incorporated. You have to work quickly here!
Working quickly, add cereal to granola butter mixture and stir to coat. Transfer to prepared pan and press down very firmly with the bottom of a heavy glass or measuring cup to compact.
Melt chocolate and remaining 1 Tablespoon coconut oil. Pour over bars and sprinkle with sea salt. Chill until firm, 30–40 minutes.
Remove 5-10 minutes before serving to let them warm up slightly before cutting or the chocolate will crack. Serve at room temperature!
