Say hello to your new favorite burger, herbed goat cheese & charred corn relish angus beef burgers! Nothing says summer like backyard BBQs, tailgates, and burgers. This simple recipe utilizes a freezer staple – BUBBA burgers – and dresses it up with a herbed goat cheese, a simple charred corn relish, and zippy pickled red onions. Serve on your favorite gluten free bun or bibb lettuce!
For the charred corn relish:
- 2 ears corn
- 1 poblano pepper
- 1/4 red onion, finely chopped
- 1 red bell pepper, chopped
- 1/4 cup packed cilantro, minced
- Juice of 1 lime
- Salt & Pepper, to taste
For the burgers:
- 4 BUBBA Burger Angus Beef Burgers
- 4 ounces herbed goat cheese
- pickled red onions
- Gluten free buns or bibb lettuce
Make the charred corn relish. Char your ears of corn and poblano pepper on the grill or over your gas stovetop. Once cool, cut corn off ear and remove the skin from the pepper, remove the seeds inside (it should fall right off) and dice. Add both to a bowl.
To that same bowl, add jalapeno, red onion, bell pepper, and cilantro in a bowl. Mix to combine. Add lime juice, salt and pepper. Stir to combine.
Grilled your burgers. Place the frozen burgers on the grill over medium heat. Grill the burgers until you start to see juices on the top, about 5 minutes. Flip and cook until the internal temperature reaches 161 degrees, about another 5 minutes.
Assemble your burgers! Place each BUBBA burger on a bun or bibb lettuce. While the burgers are warm, spread the goat cheese on top – the warmth of the burger will cause the cheese to slightly melt. Top with a spoonful of charred corn relish and pickled red onions.
