There’s an ongoing debate among Chicagoans regarding which restaurant has the best burger in the city. Trust me when I tell you that there are a LOT of good burgers, and I personally have enjoyed more than I can count.

There’s nothing better than a good burger.

The overwhelming majority of people will tell you that Au Cheval has the best – thin, greasy patties smothered in cheese and served on a buttered and grilled bun. And I agree, they do make a good burger.

But my absolute favorite burger in the city is much different.

It’s called the Goatsnake and you can get it at Kuma’s Corner. The Goatsnake is a thick angus beef patty topped with herbed goat cheese, a poblano corn relish, and fried onion strings. It’s absolutely perfect.

Luckily, I’ve recreated it so we can all make it at home!

When it comes to making burgers at home, nothing beats BUBBA burger.

Not only are BUBBA burgers delicious, they are made of clean, high-quality ingredients (they only contain ONE ingredient… beef chuck!), are completely free of preservatives and are gluten free.

But the convenience factor is what I love most. You can take them from your freezer and onto your grill or skillet in 10 minutes, making weeknight meals, summer BBQs, and tailgates a breeze. Check out where you can buy BUBBA burgers HERE.

And because the beef is high quality, it creates the perfect flavor base for our herbed goat cheese and corn relish.

These herbed goat cheese burgers are perfect for:

  • weeknight dinners – Have you ever gotten home from work with nothing in the fridge and you forget to take something out of the freezer? Yes, that’s me! Luckily, BUBBA burgers can go straight from the freezer and onto the grill and cook in 10 minutes.
  • recreating your favorite restaurant burgers – I was so happy to be able to recreate Kuma’s Goatsnake at home – and now I can have it as much as I want!
  • summer BBQs and tailgates – Just toss BUBBA burgers in your cooler and take them with you! Time to focus on the toppings and dress these burgers up.

Here is what you need to make this herbed goat cheese & charred corn relish burger recipe:

(Note: full Ingredient List is provided in the Recipe Card, at the end of this post.)

  • Burgers from BUBBA burger – 100% angus beef.
  • herbed goat cheese – Pick this up at your local grocery store.
  • charred corn relish – Flavor, friends!
  • pickled red onions – The perfect tang to offset the creamy goat cheese.
  • For serving: gluten free bun or bibb lettuce – duh!

How do you make these herbed goat cheese angus beef burgers? Easy!

(Note: full Recipe Directions is provided in the Recipe Card, at the end of this post.)

Make the charred corn relish. Char your ears of corn and poblano pepper on the grill or over your gas stovetop. Once cool, cut corn off ear and remove the skin from the pepper, remove the seeds inside (it should fall right off) and dice. Add both to a bowl.

To that same bowl, add jalapeno, red onion, bell pepper, and cilantro in a bowl. Mix to combine. Add lime juice, salt and pepper. Stir to combine.

Grill your burgers. Place the frozen burgers on the grill over medium heat. Grill the burgers until you start to see juices on the top, about 5 minutes. Flip and cook until the internal temperature reaches 161 degrees, about another 5 minutes.

Assemble your burgers! Place each BUBBA burger on a bun or bibb lettuce. While the burgers are warm, spread the goat cheese on top – the warmth of the burger will cause the cheese to slightly melt. Top with a spoonful of charred corn relish and pickled red onions.

ENJOY!
