There’s an ongoing debate among Chicagoans regarding which restaurant has the best burger in the city. Trust me when I tell you that there are a LOT of good burgers, and I personally have enjoyed more than I can count.
There’s nothing better than a good burger.
The overwhelming majority of people will tell you that Au Cheval has the best – thin, greasy patties smothered in cheese and served on a buttered and grilled bun. And I agree, they do make a good burger.
But my absolute favorite burger in the city is much different.
It’s called the Goatsnake and you can get it at Kuma’s Corner. The Goatsnake is a thick angus beef patty topped with herbed goat cheese, a poblano corn relish, and fried onion strings. It’s absolutely perfect.
Luckily, I’ve recreated it so we can all make it at home!
HERBED GOAT CHEESE & CORN RELISH ANGUS BEEF BURGERS
When it comes to making burgers at home, nothing beats BUBBA burger.

Here is what you need to make this herbed goat cheese & charred corn relish burger recipe:

- Burgers from BUBBA burger – 100% angus beef.
- herbed goat cheese – Pick this up at your local grocery store.
- charred corn relish – Flavor, friends!
- pickled red onions – The perfect tang to offset the creamy goat cheese.
- For serving: gluten free bun or bibb lettuce – duh!
How do you make these herbed goat cheese angus beef burgers? Easy!

Make the charred corn relish. Char your ears of corn and poblano pepper on the grill or over your gas stovetop. Once cool, cut corn off ear and remove the skin from the pepper, remove the seeds inside (it should fall right off) and dice. Add both to a bowl.
To that same bowl, add jalapeno, red onion, bell pepper, and cilantro in a bowl. Mix to combine. Add lime juice, salt and pepper. Stir to combine.
Grill your burgers. Place the frozen burgers on the grill over medium heat. Grill the burgers until you start to see juices on the top, about 5 minutes. Flip and cook until the internal temperature reaches 161 degrees, about another 5 minutes.
Assemble your burgers! Place each BUBBA burger on a bun or bibb lettuce. While the burgers are warm, spread the goat cheese on top – the warmth of the burger will cause the cheese to slightly melt. Top with a spoonful of charred corn relish and pickled red onions.
