Don’t you love it when dreams become a reality?! For a stint last fall, Pat and I were binging The Walking Dead on Netflix. And let me tell you, when we commit to something, we commit. I’m talking an episode a night – minimum. (It was probably more like 2-3 a night, but that makes me sound like a couch potato, so let’s stick to 1.) Mmmmk? Cool.
And oh my goodness, I was having vivid dreams. Like ‘the zombies are coming after us in my parent’s cabin in the middle of the woods and we’re gonna die’ dreams. And ‘I watched a zombie take a bite out of my sister’s neck’ dreams. Really freaking scary s***.
So we pumped the breaks on the binging, and my sleep benefited tremendously.
And then there are other dreams, the kind were a perfectly balanced and healthy lunch comes together in 5 minutes because YOU ARE A DOMESTIC GODDESS and deserve something that tastes good and is good for you.

Thanks to a little meal prep, these power bowls are ready in 5 minutes. Start with a base of greens. I opted for spinach, but you could easily use whatever greens you prefer! Add on your roasted veggies, sliced cucumber, and avocado. And finally, top the entire bowl with a can of Safe Catch Garlic Herb Tuna – make sure to use the natural juices from the can as your dressing.
Lunch is served!

Ingredients
- Spinach
- Roasted vegetables – sweet potato and cauliflower
- Sliced cucumbers
- 1 avocado
- Safe Catch Garlic Herb Tuna
Instructions
- Add a handful of spinach to each bowl. Top with roasted vegetables, sliced cucumber, and half an avocado.
- Open tuna and do not drain out the liquid. Divide tuna and liquid between each bowl.
- Enjoy!
