I hope you enjoyed Taco month in April! I had such a fun time creating recipes for Cinco de Mayo and I loved seeing everything you made throughout the month!
May is all about salads… salads that don’t suck! Salads get a bad rap. I get it. They can have zero flavor and be bland, boring, soppy pieces of wet lettuce.
But I’ve cracked the code on what makes a good salad.
- Several textures
- Complimentary flavors
- A delicious dressing to set the whole thing off!
Today’s recipe is a simple favorite of mine…
EVERYTHING BAGEL RANCH CHOPPED SALAD
This salad has everything (pun intended!) I want in a salad. It starts with a whole head of romaine lettuce – crisp, clean, and to the point. Sliced cabbage is added for color and crunch. Shaved carrots add more color and flavor. Sliced green onions add a little spice!
Next is your protein. I used shredded rotisserie chicken. This is a staple in my house! I buy a rotisserie chicken from Whole Foods and shred the whole thing for meals throughout the week. Simple and delicious! But this would also be great with canned tuna, smoked salmon, or chickpeas. YOU DO YOU.
And to top it off, roasted nuts! You can totally use any roasted and salted nut you have. I made mine with a mix of pepitas and sunflower seeds that were spicy. YUM.
Of course, no salad is complete without the dressing…
But let’s talk about the THREE ingredients to make this everything bagel ranch dressing!
Mayo: I am a huge advocate of making your own mayo. If you have an immersion blender, it could not be simpler! I like to follow this recipe and swap in avocado oil.
Coconut milk: I always keep a can of coconut milk in my pantry. It works so well to thin out your mayo to a dressing consistency without losing any of the creaminess you want in ranch dressing. And no, you cannot even taste the coconut!
Trader Joe’s Everything But the Bagel Seasoning: I know you have this in your pantry (I have three containers just in case I run out). If you don’t have a TJ’s near you, you can totally make your own EBB seasoning. Use the ratio found in my everything bagel hummus to make your own!
This is the first of many salads that don’t suck that I will be sharing with you all month long.

Everything Bagel Ranch Chopped Salad

Ingredients
For the salad
- 5–6 cups chopped romaine lettuce
- 2 cups shredded red cabbage
- 1/2 cup shredded carrots
- 2 scallions, thinly sliced
- 1/4 cup roasted nuts or seeds
- salt to taste
- protein of choice (I used leftover rotisserie chicken!)
For the everything bagel ranch dressing
- 1/2 cup mayo, preferably Whole30 compliant
- 1/4 – 1/3 cup coconut milk
- 2 Tablespoons Trader Joe’s Everything But The Bagel Seasoning OR make your own
Instructions
For the everything bagel ranch
Combine all everything bagel ranch ingredients in a bowl and whisk to combine. Season to taste with additional salt and pepper if desired.
For the salad
In a large salad bowl, toss together the romaine, red cabbage, carrots, scallions, roasted nuts and your protein. Set aside.
Drizzle salad with desired amount of everything bagel ranch. Toss and serve immediately with extra dressing!
