This summer I have been looooving overnight oats. For a long time after my Celiac diagnosis, oats just didn’t make me feel good so I stopped eating them. But they’re back in my diet and I am loving it!
And I have been really enjoying creating recipes for overnight oats because they are SO simple to make, have infinite flavor possibilities, and are the perfect option for mornings when I am not feeling my normal egg-situation breakfast. I want something fast, cold, and filling!
ESPRESSO OVERNIGHT OATS
Why these espresso overnight oats are the absolute best…
- These oats take only five minutes to prepare. FIVE MINUTES! I love going to bed knowing that breakfast will be ready when I wake up.
- Your morning coffee is built right into the recipe. Granted I usually have another cup alongside these oats too 😉
- They are sweetened with maple syrup and Square Root nutnola butter!
Overnight Oats Recipe:
For this recipe, you will need a few simple ingredients!
- old fashioned oats (rolled oats) – find ones that are gluten free!
- milk of choice – keep it dairy free with your favorite nut milk
- maple syrup (or honey)
- espresso – but you could also use iced coffee instead!
- chia seeds
- nutnola butter – or your favorite nut butter
HOW TO MAKE ESPRESSO OVERNIGHT OATS

Overnight oats are super simple to prepare, and like I said, they’ll only require five minutes of your time!
Combine all ingredients in a bowl or mason jar and mix (or shake!) to combine. Personally, I love adding everything to a mason jar with a tight fitting lid so that I can just shake to combine everything!
Store in the fridge overnight.
Serve with an extra drizzle of granola butter, fresh fruit, and granola!

Ingredients
1/2 cup oats
1/2 cup cashew milk (or milk of choice)
1 shot espresso
1 teaspoon maple syrup
1 Tablespoon chia seeds
1 Tablespoon Square Root nutnola butter
Instructions
Combine all ingredients in a bowl or mason jar and mix (or shake!) to combine.
Store in the fridge overnight.
Serve with an extra drizzle of granola butter, fresh fruit, and granola!
Notes
If you do not have an espresso maker, sub out have of the cashew milk for iced coffee!
