You guysssssssssss. Oh. My. Goodness. I had the BEST weekend. How was yours?!
I went up to Milwaukee for a wedding and drove around Marquette’s campus (p.s. it’s SO different than 5 years ago), caught up with a bunch of college friends who I haven’t seen in over a year (!!), brunched – hard, and also did some shopping at Under Armour on the way (<— I seriously have an unhealthy UA addiction).
What did you do? Tell me! Have you had a chance to fill out my reader surveyย yet?! It will only take you 3 minutes and your answers will help me provide you with better recipes and content throughout the rest of the year! And it would mean so much to me. Click HERE for the survey.
Before I hit the road, I made three batches these paleo protein cookies to make sure I had them just right. And lucky for me, I’ve got 3 batches of these bad boys at home ๐ ahhhh the benefits of recipe testing!
Now that I am eating a paleo diet, baking has become difficult. Experimenting with different flours and fats has been an adjustment; but I seriously love the texture that almond flour gives to baked goods. The almond flour makes these cookies really light and fluffy – almost a cakey texture that is so so good.
And to make these extra special, I added a big scoop of Nuzest Clean Lean Proteinย –ย Just Natural flavor. I’ve used the Smooth Vanilla flavoredย pea-based protein in recipes before,ย but have been experimenting with the flavorless version to give my recipes an extra boost!
Each double almond paleo protein cookie is only 180 calories and contains 7 grams of protein! That’s my kind of dessert.

Hello, these cookies look AMAZING!
Any idea what the carb count/cookie is?
Thank you!
★★★★★
Hi Lara! I just did a quick nutritional calculation using My Fitness Pal and they came up as 183 calories, 11 grams of carbs, and 8 grams of protein per cookie!
Try using slivered almonds in lieu of the chocolate chips or in addition to. YUM.
YUM Cathy!! That sounds delicious. How did they turn out??
Ellie, sorry for the delay in response…I just now saw your answer. Thanks so much!
Question: any way you can think of to lower the carb count for those of us that are on weight- loss?
THAT would be awesome! ๐ ๐
