Before I hit the road, I made three batches these paleo protein cookies to make sure I had them just right. And lucky for me, I’ve got 3 batches of these bad boys at home ๐Ÿ˜‰ ahhhh the benefits of recipe testing!

Now that I am eating a paleo diet, baking has become difficult. Experimenting with different flours and fats has been an adjustment; but I seriously love the texture that almond flour gives to baked goods. The almond flour makes these cookies really light and fluffy – almost a cakey texture that is so so good.

Double Almond Paleo Protein Cookies

Description

These double almond paleo protein cookies are made with only 9 ingredients, using 1 bowl, in 20 minutes, and boast 7 grams of protein in each cookie!


Ingredients

Scale
  • 3 Tablespoons ghee
  • 1/3 cup coconut sugar
  • 1 egg
  • 3 Tablespoons almond butter
  • 1 teaspoon vanilla
  • 1 cup almond flour
  • 1/4 cup Nuzest Clean Lean Protein – Just Natural
  • 1/2 teaspoon baking soda
  • 1/4 cup diary free chocolate chips

Instructions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper or a silpat liner.
  2. In a medium bowl, melt ghee and allow it to come to room temperature. Add coconut sugar and whisk until well combined.
  3. Add egg, almond butter, and vanilla. Whisk until completely incorporated.
  4. Add almond flour, Nuzest Clean Lean Protein, and baking soda. Mix until combined.
  5. Fold in chocolate chips.
  6. Using your hands, portion dough into 12 even balls and slightly flatten with your fingers.
  7. Bake for 10 minutes.

      Hi Lara! I just did a quick nutritional calculation using My Fitness Pal and they came up as 183 calories, 11 grams of carbs, and 8 grams of protein per cookie!
