This recipe (if you can even call it that!) was a total accident. *Gasp* I know!
Here’s the deal. I had originally intended on making chocolate tahini dipped watermelon slices as a fun summer dessert. Sounds good, right? Yea, you’re probably wishing I had made those instead… anyway, when I went to the grocery store last week, I couldn’t buy one.

But as I was making another recipe this week, I had leftover melted dark chocolate chips and knew I had to dip something in it. I pulled out my best TJ’s find for the week – Just Coconut Chunks – from the freezer and started dipping!
These have been such an easy treat to have after dinner. I always want something sweet at night. I think it is because my entire childhood was filled with ice cream after dinner. Literally. Every. Single. Night. And I’m 99% sure my body and brain are trained to need a little sweetness to end each night.
If I were to eat that much ice cream now, I would certainly be sick. But dairy-free dark chocolate and coconut? Oh hello, I’m your girl.

Ingredients
- Dark chocolate chips, dairy free if you prefer
- Trader Joe’s Just Coconut Chunks (found in the freezer section)
Instructions
- Melt chocolate according to the package directions or use leftover melted chocolate from another recipe.
- Dip coconut chunks and place on a parchment lined cookie sheet.
- Place in the freezer to set and store in an airtight container in the freezer.

Five years later, I have stumbled upon this recipe upon googling “frozen coconut chunk dessert recipe”. I too am an ice cream after dinner every night and I was honestly contemplating a trip to the grocery store to fulfill that craving, until I remembered I had frozen coconut chunks in the freezer!
