I have a confession. Last year for my birthday I asked for this popsicle mold and I was elated when I received a package from my little sister with it inside! Ok so that’s not really a confession… the confession is that last week was the first time using it. In 8 months! Gah I’m the worst.

The good news is that I’m bringing you my first popsicle recipe with a BANG. These babies are good – good tasting, good for you, and so simple to make.

Ever since doing the Whole30 back in January, I have totally transformed the way I look at food. Food is fuel for your body. Food is medicine. And food can heal.

One of my findings from that month was that diary and I are not the best of friends. #devastating Physically I don’t have an immediate reaction upon eating dairy; but I can definitely tell a difference hours later and the following day. The tell-tale sign: I have a monster headache on Day 2 and feel lethargic. Not ideal.

With spring around the corner and the promise of summer not too far off, I’ve got my mind set on ice cream, frozen yogurt, and creamsicles. Unfortunately, all my stomach sees is dairy, dairy, and dairy.

To fill the dairy void in my life, I have been enjoying So Delicious Dairy Free coconut milk and their yogurt alternative!

It satisfies my yogurt craving and doesn’t cause any issues with my stomach or headaches.

I combined So Delicious Dairy Free coconut milk and yogurt alternative with fresh squeezed orange juice and chia seeds to make an orange creamsicle chia pudding. You can totally use store bought orange juice, but fresh squeezed is just so much better. Amiright??

And if you use the KitchenIQ Prep & Measure tool, you can squeeze the orange juice and make the chia pudding right in the same container. I’m all about doing the least amount of dishes as possible.

Orange creamsicle chia pudding popsicles are the creamiest and dreamiest way to satisfy your sweet tooth without any added dairy!


Ingredients

Scale
  • 1/2 cup fresh squeezed orange juice
  • 1/2 cup So Delicious Unsweetened Vanilla Coconut Milk
  • 1 5.3 ounce container So Delicious Vanilla Coconut Milk Yogurt Alternative
  • 1/3 cup chia seeds
  • Grain free paleo granola
  • Orange Slices

Instructions

  1. Using the KitchenIQ Prep & Measure Tool, squeeze and measure orange juice.
  2. To the juice add coconut milk, yogurt alternative and whisk to combine.
  3. Stir in chia seeds and place in the fridge for 2 hours.
  4. Add a few pinches of paleo granola to the bottom of 8 popsicle molds. Top granola with a spoonful of chia pudding before adding an orange slice. Repeat for all 8 popsicles.
  5. Top off the 8 popsicle molds, cover, and insert a popsicle stick.
  6. Place in freezer for 2 hours or until set.

      bring on summer is right! and of course it’s a high of 47 in Chicago today… I hope it’s warmer in MN for Chris’s half marathon!
