A legume-less hummus perfect for St. Patrick’s Day – Cilantro Lime Cashew Hummus is full of flavor, paleo, and Whole30 approved!
Did you really think I was going to let St. Patrick’s Day pass without giving you something perfect to celebrate?! You should know me better than that… my last name is O’Brien 😉
And while this is not corned beef and cabbage, and there is no Guinness involved, it is green and I think it is the perfect way to celebrate the holiday!
Growing up, St. Patrick’s Day was always really fun and my mom and dad were invested in us believing in leprechauns.
We would wake up and all of the toilet water in the house would be green. LEPRECHAUN MAGIC! Looking back, it was of course food dye; but at the time I was more gullible than I am now (and I’m still pretty gullible) and totally believed it. We would always have corned beef and cabbage for dinner; and mom would make sure that the sauce that went along with the meat was green. And dad’s beer was always green too!
Luckily for us, this cilantro lime cashew hummus has no artificial colors – that GREEN is from the cilantro!
One of the things I miss most while being on the Whole30 and following a paleo diet is hummus. It’s just so good! It’s perfect for dippin’ my carrots in, for spreading on sandwiches, and it’s obvs a staple in Mediterranean food (which is pretty much a staple in my diet). So being without is hard – especially when the other member of your house does not only eat hummus, but goes HAM when he finds out the Middle East Grocery down the street has the smoothest, most phenomenal hummus anyone has ever tasted.
In hard times like this, I lean on my good friend – the cashew. Using a little magic (definitely leprechaun magic), you can turn a cashew into almost anything; you know that I love turning raw cashews into desserts and sauces and milk!
And today, it’s all about cashew hummus!
All that you need is a few ingredients and a food processor and you are on your way to the greenest St. Patrick’s Day snack!

A legume-less hummus perfect for St. Patrick’s Day – Cilantro Lime Cashew Hummus is full of flavor, paleo, and Whole30 approved!
Ingredients
- 1 1/2 cups raw cashews
- 4 tablespoons olive oil
- 2 tablespoons lime juice
- 2 tablespoon water
- 1/2 teaspoon salt
- Cilantro leaves from an entire bunch
Instructions
- Soak raw cashews in hot water for at least one hour until soft.
- Drain and rinse the cashews. Add them to the basin of your food processor.
- Add all ingredients, process until smooth.

YAY TAMMY!
