Helllllllo party people!

I am in a GREAT mood today. I had a crazy fun and productive Mother’s Day weekend. Pat and I spent time with friends and tried out a new cidery/brewery, painted some sample swatches on our living room walls, celebrated his mom, baked a ton of granola, Facetimed with my mom, and even got in a little Sunday meal prep.

The base of our meatball recipe is a mixture of beef and chorizo. And to be honest, you could probably get away with just that because chorizo is loaded with good spice. But I’ve added in a few other ingredients to help bring these meatballs up a notch. Luckily for you, and for me, all of the ingredients are pantry staples.

But the best part about these meatballs is that they are baked! No stove top searing, no oil splatters everywhere. Just roll and bake baby.

The meatballs are good enough to eat on their own, but I opted to go the slider route and serve them on sweet potato buns. Have you ever tried using sweet potato as a bun or toast? My friend Kelsey invented sweet potato toast a few years ago and pretty much crashed the internet. Well I finally got on board and totally love it!

To make the sweet potato toast, you slice up your sweet potato and literally put it in your toaster – yes! I had to toast each round a few times to get them toasted on the outside and soft in the middle. I highly recommend you give it a try!

Chorizo Meatball Sliders on Sweet Potato Buns

Description

Chorizo meatball sliders are an easy and flavor-filled way to feed the whole family! Inspired by Italian meatball sandwiches, these sliders served on sweet potato buns are a spicy and healthy spin on the classic sandwich. 


Ingredients

Scale
  • 1 Tablespoon olive oil
  • 1 large shallot, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 large egg
  • 2 Tablespoons water
  • 1/4 cup almond meal
  • 3 Tablespoons chopped cilantro
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1 pound ground beef
  • 1/2 pound spicy ground chorizo
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 450 degrees F.
  2. Heat olive oil in a skillet over medium heat. Add shallot and garlic and saute until the shallot is translucent, about 3 minutes.
  3. While the shallot and garlic is cooking, beat the egg and water together in a large bowl. Add almond meal, cilantro, chili powder, cumin, and oregano. Mix thoroughly.
  4. Add in the sauteed shallot and garlic, along with the beef and chorizo. Add salt to taste. Use your hands to mix until fully combined.
  5. Spray a baking sheet with olive oil. Using your hands, shape mixture into 2 inch diameter meatballs – you should get 16 – and arrange them on your baking sheet.
  6. Bake for 15-20 minutes, until the meatballs are cooked through.
  7. Serve on sweet potato rounds (I toasted mine but you could roast them too!) with lettuce, guacamole, and more cilantro!
