What. A. Week. The Cubs won the World Series!! And how sweet to win it in Game 7, in extra innings after 108 years. Pat and I live within 5 blocks of Wrigley Field and when they won on Wednesday, the neighborhood went bonkers. I’m not even much of a baseball fan, much less a Cubs fan (go Sox! 2005!), but I was in the best mood on Thursday – the entire city was. And it is so cool to be a part of something this special. Plus, the parade is today and I have a feeling it is going to be bigger than the celebration for the Hawks Stanley Cup win.

And can we talk about David Ross for a minute?! Hitting a home run in Game 7 of the World Series, which also happens to be the last game of your career?! My heart melted for him; I was so happy and can only imagine the emotions he was feeling.

This might make me sound like a terrible person, but I was also SO glad that LeBron was there to see the Indians lose. I don’t have a good reason; but he is just not my favorite person. He said it himself after being down 3-1 to the Warriors last NBA Finals, anything is possible. And the Cubs believed that. Maybe LeBron used up all the good luck in Cleveland last year and there wasn’t enough left over to for them to win another championship. But, I guess he’s not that bad.

In other news, I made granola this week – go figure! I always have granola in my pantry (you can check out all my granola recipes here), but most recently I’ve been eating Blissful Eats granola. Anyway, I ran out and needed granola back in my life ASAP. Instead of going the traditional route, I decided to bring my favorite latte flavor to life – Chai!

Description

My favorite latte flavor in granola form. This chai spiced granola combines all of fall’s warmest spices with oats and almonds for breakfast.


Ingredients

Scale
  • 3 cups oats
  • 1 cup almonds, chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ginger
  • 1/8 teaspoon all spice
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted and cooled

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine oats, almonds and spices. Stir to combine. Add maple syrup and coconut oil and mix until well coated.
  3. Spread mixture on a baking sheet and bake for 30 minutes, stirring halfway through.

    chai spice is my FAVE spice blend ever & this granola looks awesome – i’m picturing a fall parfait in my future with this layered on in! =) & those cubs!!! enjoy all the celebration in chicago this weekend, girl! i’m also not much of a baseball person either, but it’s hard not to cheer for the cubs. our friends who live near you were snapping the streets filling up after the game & it looked amazing.

      It was outrageous. Totally crazy. We had 5 million people in they city yesterday and it was insane. And that parfait sounds delightful!!
