1 sweet potato, cubed
1 tablespoon taco seasoning (I love Trader Joe’s!)
Salt (omit if taco seasoning contains salt)
12 ounces brussels sprouts, shredded
Serve with: tortillas (corn if reintroducing grains), greek yogurt or cojita cheese (dairy), black beans (legumes), pickled red onions, and cilantro
Heat a cast iron skillet over medium. When hot, add a drizzle of olive oil and sweet potato. Mix in the taco seasoning and salt. Saute until softened. Add in the shaved brussels sprouts, another drizzle of olive oil, salt, and lime juice. Stir to combine. Allow brussels to cook, untouched for a few minutes in order to char. Toss once and cook through.
Assemble tacos! Serve on your favorite tortillas with toppings!
