I’ve been on a chia pudding kick lately, as witnessed here and here. But sometimes I want more… is that so much to ask?!

But you get it right? Chia pudding is wonderful, but it doesn’t always do the trick for me. That’s why I doubled down today and topped it with a beautiful blueberry smoothie.

First let’s talk smoothie. I like my smoothies thick AF. I’m not opposed to slurping down a smoothie with a straw, but I certainly prefer using a spoon.
That’s why frozen blueberries are KEY. Oh and frozen cauliflower rice too. Adding cauliflower to smoothies might sound weird but trust me on this one.
Sneaky veggies + no added flavor = smoothie win.
In other news, yesterday marked Day 1 of the second half of my summer. No more out of town plans. No more crazy weekend events. Just me and ma babe hanging in the city we love.

Blueberry Smoothie Chia Pudding

Description
Two of the best breakfast treats combined into one, this blueberry smoothie chia pudding is packed with protein, fiber, and healthy fats.
Ingredients
For the chia pudding:
- 1/2 cup unsweetened almond milk – I prefer Califia Farms.
- 2 Tablespoons chia seeds
- 1/8 teaspoon vanilla extract
For the blueberry smoothie:
- 1/3 cup frozen blueberries
- 1/2 cup frozen riced cauliflower
- 1/2 cup unsweetened almond milk – I prefer Califia Farms.
- 1 scoop vanilla protein powder – I prefer Nuzest Clean Lean Protein.
Instructions
- Add the almond milk, chia seeds, and vanilla extract in a small jar. Shake to combine and place in the fridge to set for at least 2 hours, preferably overnight. Stir partway through to make sure chia seeds do not clump together.
- After the chia pudding is ready, place blueberries, cauliflower, almond milk and protein powder into your blender or food processor. Process until combined.
- Add the chia pudding to a glass and top with the blueberry smoothie. Add extra frozen blueberries and enjoy!
