I originally posted this recipe back in 2018, but decided to give this Whole30 sausage recipe a refresh with some new pictures and push it back to the top of your feed because we can all use a little bit of homemade breakfast sausage in our lives!

I feel like I haven’t talked to you in forever! How are you? How was your Christmas and NYE?? I spent mine with my family – pretty much unplugged from anything work / blog / social media related in order to be present. And that little break was such a refreshing way to finish 2017 and gear up for 2018.
And now we are here – 2018! Totally crazy.

I’m in love. I seriously don’t know why it’s taken me so long to make my own breakfast sausage. I mean…
- They’re hella-easy to make.
- Customizable AF.
- Freaking tasty.
I used pork as the base of these breakfast sausages. I’m a sausage purist, so pork it is. But these would also be great with beef, chicken, or turkey too. Or you could double the recipe and do one pound of pork and one pound of beef! (That’s what I did for these pictures!)Yes, let’s do that.

… in fact, I bet you have everything already in your fridge and pantry!
As I mentioned, I am a sausage purist so ground pork is my meat of choice. But I love doubling this recipe and using a pound of ground beef too!
Spice, spice, baby. Fennel seeds, red pepper flakes, thyme, sage, and salt bring a ton of flavor as well as the garlic and shallot.
That’s it.
What is the best way to cook these whole30 breakfast sausages?
- Get in there with your hands! I find that the spices are best distributed throughout the meat if you mix it by hand, with your hands. Don’t be shy!
- Cook these in a cast iron skillet (THIS one is my favorite – only $25!).
Oh and let’s not forget that you don’t need to be doing a Whole30 to make these.
Instead of asking yourself if you are doing a Whole30. Ask yourself, do I like really delicious and sausage-filled breakfasts? The answer is obviously yes.

Best Whole30 Breakfast Sausages

Description
These Whole30 breakfast sausages served in an easy breakfast bowl are a simple and scrumptious way to start your day! All you need is 10 minutes and your breakfast will be loaded with flavor and will keep you full for hours!
Ingredients
- 1 pound ground pork
- 1 teaspoon salt
- 1 teaspoon fennel seeds
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon pepper
- 1/2 teaspoon dried sage
- 1/2 dried thyme
- 1 shallot, finely chopped
- 1 clove garlic, minced
Instructions
- Add all ingredients to a large bowl and use your hands to combine. Once all of the ingredients are evenly incorporated, divide into 8 patties.
- Heat a skillet over medium (I used my cast iron), and add a drizzle of olive oil.*
- Add sausage patties to skillet and cook for 2-3 minutes. Flip and cook for another 2-3 minutes, or until done.
- Serve in a breakfast bowl with your favorite goodies – sauteed kale, steamed sweet potato, a fried egg, and avocado!
Notes
*The pork I used had enough fat for me to skip the olive oil. But if you switch out the meat or combine meats, I suggest adding a teaspoon to the bottom to keep the sausages from sticking.
