Can I be real with you for a sec? I love food. Obviously, right? I have a food blog which pretty much consists of me making lots of things, taking absurd amounts of pictures, posting them here for you to see, and telling you about how wonderfully delicious they are and why you should make them.

Oh hi! I’m Ellie and I like things other than food. To name a few:

  1. Sleeping. This might be obvious; but I love a good Saturday nap on the couch, in addition to a solid 7 hours every night.
  2. A fresh manicure / getting my nails done / any type of self care. I’m all about self care and you should be too. Self care is good for the soul.
  3. Kanye West (his music, not the person). Totally random, I know. And when I tell people that for the first time they usually think it is out of character for me. But his music is incredible and you cannot argue with that. I’m currently OBSESSED with this song.
  4. Reading fiction. I love the escape that fiction provides – especially when reading the news can be so utterly depressing.
  5. Following dogs (corgis specifically) on Instagram. I follow an obnoxious amount. #sorrynotsorry But you should follow me!
  6. Binge watching shows on Netflix. Favorites include (but are not limited to): Parks and Rec, The Office, New Girl… aaaaaaand I’m going stop there because you’re going to think all I do is watch TV.

Baked oatmeal is my jam. It’s so easy to throw together and you can bake up a whole pan at once – great if you are feeding a crowd or are meal prepping for the week. This baked apple cinnamon oatmeal is filled with hearty and good-for-you ingredients including oatmeal, almonds, apples, applesauce, almondmilk, and it’s sweetened with maple syrup. So you know it’s going to keep you satisfied until lunch!

Baked Apple Cinnamon Oatmeal

Description

A fall inspired breakfast full of oats, almonds, apples, and good for you ingredients. Make this baked apple cinnamon oatmeal during your Sunday meal prep!


Ingredients

Scale
  • 2½ cups old fashioned oats
  • ½ cup chopped almonds
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • ¼ teaspoon salt
  • 1 cup unsweetened almondmilk (I prefer Califia Farms.)
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 egg
  • ⅓ cup maple syrup
  • 2 Tablespoons melted coconut oil, cooled
  • 1 large Granny Smith apple, diced
  • 1 Tablespoon turbinado sugar

Instructions

  1. Preheat the oven to 350° F and lightly spray a 2 quart baking dish. (You could also use an 8×8 in square baking dish.)
  2. In a large mixing bowl, mix together the rolled oats, chopped almonds, salt, cinnamon, and ginger.
  3. Whisk together the almondmilk, applesauce, vanilla extract, egg, maple syrup, and coconut oil. It is important that all of these ingredients are at room temperature – you do not want the coconut oil to harden from the cold milk. Add the wet ingredients to the oat mixture and stir to combine. Fold in the diced apple.
  4. Turn the mixture out into your baking dish. Transfer the oatmeal to the oven and bake for 25 minutes. Sprinkle the turbinado sugar over the top and bake for an additional 10 minutes, or until most of the liquid is absorbed and the oats are set – they should be spongy.
  5. Allow oats to cool slightly before serving.
  6. Store leftover in the fridge and reheat in the microwave with a splash of almondmilk!

    I like sleeping too! But what is that, really? I mean, I remember sleeping before I had kids, but now it’s a long lost memory. LOL. THIS recipe would make my house smell sooooo good and my belly soooo happy!!!

      Honestly, I’m kinda terrified of what is going to happy to my sleep schedule once I have kids… I literally am such a crab if I don’t get enough sleep and know I won’t get enough once there are little ones running around!

    Just made this and assume you are supposed to add in the applesauce before baking? It’s not included anywhere in the steps but it’s on the ingredient list…
