Time is a funny thing.

Three years have passed since my dad died. There are moments that I feel like a lifetime has passed since then, like I have lived a thousand lives. When I look back on all that has happened in my life and the lives of my mom and sisters over these 3 years, I am astounded.

Pat and I got married. We bought a house and a car. Renovated the house. Started a business. Dealt with death and sickness in our families. Traveled to Italy. Was diagnosed with Celiacs.

And then there are times that it seems like only yesterday. Like I blinked and somehow I ended up here.

This weekend I took a break from social media and slowed waaaaay down. We ordered pizza and drank wine, toasting to my dad. We watched the storm roll in as we hid under the blankets. We slept without setting our alarms and saw a movie. We took naps and ate tacos. And because we had nowhere to be, the weekend felt like it lasted forever.

There are moments in life that are forever ingrained in my memory. Saying goodbye to my dad three years ago is one of those moments. But there are everyday moments too, moments that, to someone looking in, mean nothing. But to me, for some reason leave a lasting impression.

Picking green beans out of my mom’s garden is another one of those moments. I can vividly remember being sent to the garden to pick fresh green beans for dinner in the summertime. I love them – especially raw. Now I buy fresh green beans from the farmer’s market. Someday I hope to have a garden of my own; but until then, the farmer’s market will do.

Blistered green beans are my second favorite (behind raw, of course) way to eat green beans. I prefer blistering to steaming because the quick heat will leave the beans quite firm and with a little bite. Plus I blistered these in bacon fat… which is always a good idea.

Description

This two ingredient bacon blistered green bean recipe is made in under 15 minutes and is paleo and Whole30 approved. Plus, everything is better with bacon!


Ingredients

Scale
  • 2 pieces bacon, cut into small strips
  • 1 pound green beans, cleaned and trimmed

Instructions

  1. Heat skillet over medium heat. Once hot, fry bacon until crispy.
  2. Remove bacon and remove all but 1 Tablespoon of bacon fat.
  3. Add the green beans and saute for 5-10 minutes or until they begin to blister.
  4. Add green beans to a serving bowl and top with bacon bits.
