A protein packed sweet treat to satisfy your afternoon cravings, these AIP Banana Bread Bites taste like banana bread without having to bake!
2 cups coconut flakes
1/4 cup mashed ripe banana
1/4 cup coconut flour
1/2 cup collagen peptides
1/2 teaspoon cinnamon
1/4 teaspoon salt
Coconut butter, to drizzle
Preheat the oven to 350 degrees F. Toast the coconut in the preheated oven for 5-7 minutes, or until lightly golden brown. Let cool for about 10 minutes.
Add the coconut into a food processor and process for 3-5 minutes, scraping down as necessary, until it turns into a finely ground, mealy texture.
Add remaining ingredients in a food processor and process until a dough has formed.*
Using a cookie scoop, scoop out the dough onto a parchment lined cookie sheet. Place in the freezer for 10 minutes to set.
Remove and drizzle with coconut butter.
Place back in the freezer for 20 mores minute and store in a airtight container in the fridge.
*If your mixture is still wet and doesn’t form a dough, add another 1 Tablespoon coconut flour.
