Okay don’t be mad at me. If you look at the recipe, there are *technically* 6 ingredients in these cranberry pistachio energy bites – but salt doesn’t count! We all have salt in the pantry so I’m not going to count it as an ingredient.

Got it? Good.

And for future reference, pepper and olive oil don’t count either.

Now that we’ve got that out of the way, we can talk about real things. Good things. More exciting things than whether or not salt should be counted in my five ingredients. Things like my brother-in-law’s graduation from DePaul this past weekend!! Congrats Joe – I am so incredibly proud of you! And these cranberry pistachio energy bites which have been getting me past my 3 o’clock slump all week.

We spent last weekend celebrating and definitely overindulging. By Monday by body was craving greens, lots of fruit, lean protein, and healthy fats. It’s amazing what your body tells you if you actually listen to it!

But it’s not always easy for me to listen to what my body is telling me – especially during the summer when I’m attending graduation parties and weddings. Plus it’s patio season! And all I really want to do is sip margs and eat guac outside. Indulging every once in a while doesn’t completely throw me off; but I have a few tricks to help me make better decisions and get back on track.

The best and easiest way for me to get back on track is to always have healthy snacks around. Energy bites have been my go-to snack for some time now.  They are infinitely customizable, bite-size, and portable. I love having one in the morning before my workout; I can’t workout with much of anything in my stomach, but it’s nice to have a little energy boost before I hit the gym. And I love having one for a mid-afternoon pick me up.

5 Ingredient Cranberry Pistachio Energy Bites

  • Prep Time: 10 mins
  • Total Time: 10 mins
  • Yield: 12 large bites 1x

Ingredients

Scale
  • 1/2 cup pitted dates, soaked and drained
  • 1/2 cup dried cranberries
  • 1/2 cup pistachios
  • 1/2 cup cashews
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

Instructions

  1. Place dates in the bowl of your food processor and process until the dates are broken down into rice-sized pieces, scraping down the sides as needed. Add cranberries and continue to process.
  2. Add the pistachios, cashews, and salt to the bowl, pulsing to break up the nuts.
  3. Add the chocolate chips and continue to pulse to break up the chips and the ingredients come together and form a dough.
  4. Roll into 12 equal sized balls and place in the freezer to set for 1 hour.
  5. Store in the fridge and enjoy!
