Nothing is better than dinner in 30 minutes… except when it is cooked on ONE sheet pan! These sheet pan sausage and peppers are Whole30 approved and make a quick and easy weeknight meal – no prep required!
Hiiiiiiii! Now that I’m only posting new recipes once I week, it feels like FOR-EV-RRRRR since I’ve talked with you. How are you? Are you doing the Whole30 too? How are you feeling?
This month has been great for getting me back on track with my eating. I definitely overdid it on the sugar at Christmas (I literally ate 2 cups of puppy chow in one sitting… and regretted it almost immediately due to an upset stomach). But it is amazing how GOOD eating the right foods can make you feel.
And honestly, that is what is so empowering about the Whole30. Eliminating foods and reintroducing them one at a time is such an eye opening experience on how these foods actually make you feel.
The science-nerd in me loves that it’s one big science experiment 😉
The biggest thing I learned during my first Whole30 (you can read all about it HERE) is that my body functions best with a combination of animal protein, healthy fats, fiber rich vegetables, and with minimal diary, grains, and legumes.
I spent the better portion of last year learning how to cook in a way that was foreign to me and discovering products that aided my new lifestyle.
And one thing that I learned is that I love… SHEET PAN DINNERS. There is nothing better than throwing everything on one pan, tossing that thing in the oven, and only having to clean up one pan.
Did you hear that?? ONE PAN.
I feel like I’m yelling… I’m not yelling at you. I’m just very excited about the possibility of only washing one pan after dinner. And I know you are too.
Sheet pan sausage and peppers are so easy to make and are my go to when I forget to pull something out of the freezer to thaw. I tend to always keep some kind of sausage in the fridge – and vegetables too, obviously – so this dinner comes together in a snap.

- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 white onion
- Olive oil
- Salt and pepper
- 1 package pre-cooked Italian chicken sausage (make sure there is no sugar!)
- Preheat oven to 400 degrees F.
- Slice bell peppers and onion. Place on a sheet pan and drizzle with olive oil, salt and pepper.
- Bake for 10 minutes.
- Add the sausage to the sheet pan and bake for an additional 20 minutes.
