A simple and tropical mango chia pudding made with only 4 ingredients is the perfect summer snack or dessert that is paleo and Whole30 too!

So I somehow missed the boat… the OMG chia pudding is so freaking delicious boat! Seriously though, how long has chia pudding been this good??
My first encounter with chia seeds was not a pleasant one. My sister had started brewing her own kombucha – long before I started last summer. I had a) never had kombucha before b) never had chia seeds and c) definitely had not had the two together.
That first sip was slime-y, a little vinegar-y and I was NOT into it.
And I still don’t like chia in my booch, no way. But chia in pudding form… I am all about it.
I love this mango chia pudding for a few reasons:
- Only 4 ingredients – coconut almond milk, coconut butter, mango, and chia seeds
- Made in your food processor
- Paleo and Whole30

Make this Tropical Mango Chia Pudding, post a picture on social media and use the hashtag #imhungrybynature for a chance to be featured!
- 1 cup almond-coconut milk
- 1 cup diced mango
- 2 teaspoons coconut butter
- 2 Tablespoons chia seeds
- Blend milk, mango and coconut butter until smooth.
- Pour mixture into glass jar and stir in chia seeds.
- Place in the refrigerator for 2 hours.
- Top with flaked coconut and enjoy!
