Gosh I am exhausted. For the first time in 6 weeks I am going to be home for more than 5 days straight. I’ve been incredibly busy lately and my energy levels have been dropping. But I’m home and have 11 days of sleeping in my own bed. Thank goodness!

10 minutes and a food processor are all that stands between you and these 3 ingredient brownie bites.
To be honest, I had no intention of posting this recipe on the blog. I have a hard time even calling this a recipe because it is so easy. But you guys want EASY and HEALTHY and REAL food, so here it is.
I ran out of coconut fat balls one day last week – one of the two days I was actually home. And I knew I needed to make some more energy bites to have before my workout the next morning, as an afternoon pick-me-up, and for snacks to have in the car on our road trip to Minnesota.
In my cupboard I found half a bag of hazelnuts and decided to just go for it. Into the food processor went those hazelnuts, dates, and cacao powder. And out of the food processor came these brownie bites!
Don’t they look fabulous?! They are chewy and fudge-y, just like I like my brownies. And nutella-y (p.s. that is a word… I just made it up) from the hazelnuts and cacao. If you’re looking for me, I’ll be snacking on these all week!

- 1 cup raw hazelnuts
- 1 cup pitted dates
- 2 Tablespoons cacao powder
- Place all ingredients in a food processor and pulse until combined.
- Using a cookie scoop, scoop mixture into evenly sized amounts and roll into balls between your hands. It will help to have your hands slightly damp in order to prevent sticking.
- Store in the fridge.
