Vanilla Honey Peanut Butter

Simple homemade peanut butter with a touch of honey and dotted with vanilla bean seeds.

Do you see those vanilla bean seeds?? DO YOU SEE THEM? They are giving me life and are the only thing getting me through this week of dis.gust.ing. weather. I mean it’s gross.

But those vanilla bean seeds, those are a gift from God.

I’ve been making nut butters at home for a few years, in addition to buying my favorites from the store, obviously. But it’s so easy. Like beyond easy, as long as you have a food processor.

I first came upon this recipe from Ambitious Kitchen a few years back and fell into a cycle:

  1. Make a batch.
  2. Eat it unreasonably fast.
  3. Feel a little guilty for the quantity of PB I consume in a short period of time.
  4. Decide that I need to cool it on the PB.
  5. Forget about how delicious it is.
  6. Remember how delicious it is.
  7. Make a batch.

… and we’re back to the beginning of the cycle.

There is no escaping it. But you know what? I’m totally OK with it because this peanut butter is EVERYTHING.

I’ve been eating it on toast with sliced naners and sprinkled with TJ’s Super Seed & Ancient Grain Blend (love that crunch!). Sometimes I’ll swirl it into my morning oats. It’s crazy delicious spread on a few dates for a sweet treat. And yes, I most definitely eat it right off of the spoon. #sorrynotsorry

Vanilla Honey Peanut Butter

Serves: 1¼ cups
Ingredients
  • 2 cups unsalted roasted peanuts
  • 2 teaspoons honey
  • 1 vanilla bean, split lengthwise and seeds scraped
  • ¾ teaspoon salt
  • 2 teaspoons coconut oil
Instructions
  1. Place peanuts in your food processor and process until the nuts begin to form a creamy paste, about 4-5 minutes.
  2. Add in vanilla bean seeds, honey, salt and coconut oil; process again for 2-4 minutes or until creamy. At this point, the peanut butter should be very smooth. I didn't have to process it any further, but if it isn't as smooth as you would like, add an additional teaspoon or two of coconut oil. You also add another teaspoon of honey if you like it a little sweeter.
  3. Pour peanut butter into a mason jar, or another airtight container and seal tightly. Store in your pantry or the fridge.

      Thanks Emily! It’s definitely creamier than the ones I buy too… that’s the best part about making your own – you can continue to process it until it is your desired consistency. If you store this in the fridge, it will firm up; but you don’t need to keep it in the fridge!

      Just keep processing it and it will get there! That and a little coconut oil will do the trick :))
